Chocolate and Peanut Butter Covered Bananas

That title says it all, doesn’t it? A simple, easy recipe that combines three of my very favorite foods.

Benjamin and I made these deliciously sweet little gems this past weekend. And I needed a sweet treat. Somehow, I ended up with poison ivy down both arms. Ever had poison ivy? It’s not any fun. I thought that I was immune to it – you’re either allergic or you’re not, right? Needless to say, I’m not. I’m pretty sure that I was attacked (and yes, attacked works here!) while gardening. This is ironic because my garden has done terribly this summer. My black thumb can’t grow tomatoes or radishes, but it can grow poison ivy. I have the bumps to prove it. Awesome.

If you’ve never had poison ivy, you can’t fully comprehend the extent of the itch. It makes you feel miserable.  And mine was a very, very mild case. Pierre is a poison ivy magnet. He’ll get more spots on one toe than I had on both arms. I realized this weekend that I haven’t given him enough sympathy when he suffers from contact with the vicious little three-leafed bugger. I get it now, in more ways than one.

In any case, I was a poison-ivy-induced grouch. With a capital G. I’m sure that Pierre could think up more colorful words to describe me, but this is a family blog.

What to do with the grouchies? Feed them chocolate!

Chocolate and peanut butter covered bananas. Is there a more mouth-watering mouthful? Ben and I had a blast putting these together for our Sunday evening dessert. And it’s a fun and easy treat to make with the kids.

Here’s how:

First, you’ll need two or three bananas, peanut butter (we used crunchy, but smooth would work just fine) and some chocolate. Ben and I used a mixture of semi-sweet baking squares and dark chocolate chips, because it’s what I had on hand.

Prepare a baking sheet lined with wax paper and set aside.

Next, cut the bananas into wide slices, about 6 or 8 per banana. Bananas are soft, so Ben used a butter knife.

Then, melt the peanut butter and chocolate together in the microwave, for about a minute. This is the grown-up part of the project – the bowl gets hot! Once melted, stir your mixture until smooth.

Then, dip each slice of banana in the mixture until completely covered in chocolate-peanut-buttery goodness. Place slices on wax paper lined cookie sheet.

Finally, add toppings. Only if you want to. Ben and I used some coconut, because coconut is delicious.

And done! Place your banana slices in the freezer for at least an hour until the chocolate hardens. Leave them longer if you want the banana to freeze.

Enjoy!! These are so tasty, and I’d like to think that they aren’t so bad for you either, as far as desserts go. One or two pieces is more than enough to satisfy a sweet tooth.

Here’s the recipe:

Chocolate and Peanut Butter Covered Bananas

Ingredients (these are all approximations):

  • 2-3 bananas
  • 1/2-3/4 cup of peanut butter (smooth or crunchy, your choice)
  • 1/2-3/4 cup chocolate (dark, milk, semi-sweet – you choose!)
  • Toppings – coconut, peanuts, nuts, M&Ms etc…

Directions:

  1. Line a baking sheet with wax paper. Set aside.
  2. Slice bananas into wide pieces, about 6-8 per banana.
  3. Melt peanut butter and chocolate in a microwave-safe dish for approximately one minute on high.
  4. Stir mixture until smooth. Be careful when removing from microwave. The bowl will be hot!
  5. Dip bananas into mixture until completely covered. Place on cookie sheet.
  6. Add toppings as desired.
  7. Place in freezer for at least one hour until chocolate mixture hardens.
  8. Enjoy!

So, after blogging about Ben’s ear infection, a good friend messaged me on Facebook with a unique remedy for ear pain. She’s had a ruptured eardrum, so if she says that this works, I’m inclined to believe her. Here’s the message: “If Ben complains about pain, take an onion and mash it as you would a potato. Then, wrap it in something and heat it in the microwave till it’s hot (not hot like I'll burn you if I touch it, but hot). Take it out of the microwave and wrap it in a towel (don't worry you can wash it out after), put it on a pillow and then have Ben put his sore ear on it. When he no longer feels the heat, move a piece of towel away so he is one layer closer to the onion.” What do you think? Neat, eh? My pediatrician recommended a few drops of olive oil in the ear to ease pain. I’ve tried it with Ben, and it seemed to give him some relief. I’m going to try the onion. Why not? It’s an alternative that just might work. And I think that Ben would find it kind of fun to put...

Here we go….

I’ve been wanting to start a blog for a while now. I’ve spent a lot of time thinking about starting it, talking about starting it, tinkering with the layout (and that was hard because I am basically a computer-dummy), and now, writing it. Is anyone actually going to read what I write on here? Maybe. Well….my mom will read it (Hi Mom!). Regardless, I do have a purpose to starting this, and here it is: Deciding to be a mom was one the very best decision that I have ever made (second only to marrying Pierre), and I want to share that. The time spent being home with my boys goes by so fast. Ok….let’s rephrase that….actual days can seem endless (and there are definitely times when I call Pierre at work, and tell him not to dare come home without wine. Or chocolate. Or both!!), but still each day, each week, seems to be going by faster and faster. I blinked and my youngest went from being a baby to turning three years old this coming Tuesday. And the next time I blink he’ll be thirty-three!...

Caterpillars Are Friends

After all the complaining about ticks, I probably should try to show that I am a friend to most creepy-crawlies. So, allow me to introduce to the newest members of our family….five Painted-Lady Butterfly caterpillars.   Nicholas received these little critters for his birthday from our very good friends Kim & Brad, and their three awesome kiddos.  (Kim used to teach preschool…can you tell?). They came as part of a Live Butterfly Garden and Hatching Kit. We ordered our caterpillars online (anyone interested? Check out www.insectlore.com ), and within three days our caterpillars were delivered to our front porch (I wonder what the postman thought of that? Hope he doesn’t mind larvae!). The boys and I followed the directions in the box, which pretty much amounted to leaving the hungry little bugs alone, (Nicholas needs frequent reminders. He likes to turn the jar upside-down. Can caterpillars have heart attacks?), and in a few more days we should have five little chrysalid...
